Have you ever had every good intention of having a wonderful meal on the table when your DH came home from work, only to look at the clock and realize that you've been blogging all afternoon and now have about 30 minutes to get something together? Not that I have ever done that, but just in case you ever find your self in that situation I'm going to share a really quick dinner that we love. My grandmother used to make chicken and yellow rice. I have no idea how she made it, but I'm sure her recipe was much more involved than this.
3 ingredient, one pot meal. I serve with Sister Schubert's dinner rolls, because there is no way
I could make any that are this good! Pick up a package of saffron yellow rice and 1 can of cream of chicken soup. I usually have some frozen cooked chicken on hand to use in casseroles, but you could probably substitute canned chicken. Tear it into smallish pieces.
Prepare the rice according to package directions. When it is almost done (approx 10-15 minutes, add the chicken and cream of chicken soup. I generally add 3/4 of a can, but you can add the entire can if you like.
I usually serve this with a green vegetable or a salad, but I was so busy blogging, um, reading "War and Peace" this afternoon that I forgot! This really is a comfort food to me, and I hope you like it too! Now let's run over the Gollum's place and see who brought dessert!

Looks good to me! My 91 year old mother-in-law cooks almost every night. What a blessing that is!!! I can work/play until we go for dinner. She lives a mile down the road and brother-in-law comes from the other side of the village. Good times!

I've never seen saffron rice before around my parts..I could see it being a life saver at times. Great quick & easy meal... But I've never spent an afternoon checking blogs..lol
Okay, guilty as charged! I do this every night. ( read war and peace, of course ) My hubby will call me when he's leaving work which gives me 20 to fix a fabulous dinner..so I hear ya and I'm trying your idea of adding the can of cream of chicken to the dish. I use that kind of rice a lot and will add frozen peas and olives as well.
I haven't had saffron rice in forever, and I don't know why - I love it! And you just can't beat Sister Shubert rolls - she has several different kinds that we love. Thanks for a great recipe! Linda

OMGoodness....shhhh....I've been known to hear the pickup drive into the driveway, I run smudge a little flour on my face, open the door to the washer, string clothes out around it, have the freezer door open, pantry door wide open and he finds me standing at the stove, boiling water...he never realizes it's JUST water so by the time he reads his paper, I really DO have something cookin'.....hahaha...ain't this fun!!

Now Kathy this is my kind of recipe!! Ummm not that I ever lose track of time blogging...everyday pretty much....and have to throw something together in ten minutes....uh uh not me! *winks* And as much as I love so many of the foodie posts? So many of them I just can't eat because they're too high in fat *sighs* But yours can be fat reduced very easily with low fat cream of chicken soup and white breast meat. So it's healthy too! I'm lovin' this girlfriend! Thanks for this one. I really will make some! Vanna
